Job title: Demi-Chef de Partie
Department: F&B – Kitchen
Report to: Sous Chef/Executive Chef

Qualifications: Working experience as Commis in kitchen brigade

Job summary: In absence of Chef de Partie takes responsibilities of this section; assists Chef de Partie in all aspects

Purpose of job: The occupant of this position has to execute her/his job in a way that

  1. All duties implied in this job description and all duties related to kitchen issues can be fulfilled correctly, quality oriented, on schedule and economical.
  2. Given and established services and quality standards can be achieved at any time.
  3. Budgets are kept according to given cost factors and calculations
  4. Machinery and equipment is used economical and appropriate to the operating instructions and well maintained
  5. Subordinates
    • can fulfill their duties according to their contracts and national employment laws
    • are motivated and feel positively about being employed at the hotel
    • have skills in their respective field, are regular trained and developed
    • are led by example according to overall standards

  7. All activities comply with local laws, policies and guidelines.
  8. An overall clean and attractive image can be represented.
  9. Ensures that all confidential data will remain as such.
  1. Prepares food of consistent quality following the respective recipe cards and hygienic standards.
  2. Handles special requests from guests in a positive manner.
  3. Supervises, trains and develops subordinates, makes corrections where needed.
  4. Ensures that food items for mis-en-place are prepared ahead of time, preparation shall not exceed estimated needs.
  5. Complies with hygiene and sanitation standards.
  6. Ensures that food items are stored according to their requirement.
  7. Set-up and replenishment of buffet lines.
  8. Assists in maintaining service and presentation standards.
  9. Maintains clean and orderly workplace at all times.

Prerequisites: Education:
None specific, fluent in local language of destination

Experience:
Experience as Commis

Skills:
Open to take on responsibility

Physical:
Above certain age (as per local laws), posses a Health Certificate (as per local laws); neat in appearance

Profil recherché

Demi-Chef de Partie ( Cuisine) expérience de 2 ans minimum exigée, langue Allemande exigée ( B 1)
